Of all the works on your list, I would say the Mishnah/Talmud will be the most challenging. There is a method of reading it called “Daf Yomi” where you read one entire page (daf) each day, and it gets you through in 7 and a half years. Perhaps you can join Daf Yomi when a new cycle begins, and do that alongside your other reading. If you don’t read it all, Penguin has a decent abridged volume.

Do you read in parallel meta-literature (e.g. modern comments on Plato)?

Also, I’d like to suggest adding Goethe, in particular Faust I, to your list!
